The story of coffee begins where the green coffee bean hidden in the red coffee cherry of the coffee tree , for some they call it magical, and no matter how it was jealously or greedily guarded neither merchants, queens, kings or priests could keep it from spreading throughout the earth. Sooner and later we are captured by its aroma, acidity, body and flavor. Just like the history of coffee,my first encounter was unexpected,from the cold mountain side of Bukidnon. Back when I was a child, Ive tried harvesting those coffee cherries and not knowing that it was the start of my coffee journey. We washed it and dried the cherries under the striking sun of Malaybalay, we crushed the coffee cherries to release the hidden green seeds that was coffee bean. Now, I realize how magical the coffee made my journey up to this day.

Coffee is a traditional beverage ,and drunk in many social occasions there. They call it BUNA DABA NAW or COFFEE IS OUR BREAD. The Ethiopian coffee ceremony is an important part of their culture. In Ethiopia, only the eldest woman is allowed to perform the coffee ritual that is why I am honored to prepare this coffee for you.
The ceremony starts by roasting the green coffee beans in a flat bottomed pan. After a couple of minutes, the bean starts to release their coffee oils, and the host should make sure not to burn them, the result of this process is dark brown, shiny, and oily roasted beans. Once roasted, they place it in a flat basket, which is passed around the participants so they can enjoy the aroma. The beans are then grinded in a wooden mortar and pestle using their hands.
the JABENA CLAY JAR is usually made out of black clay. The long neck and round base make the Jabena a pleasure to look at. When the coffee starts to boil, it is poured in and out of another container to cool and then put back pot to boil again. Aside from jabena, Ethiopian people have another coffee tradition called GHEE where they mix clarified butter with their coffee and pair it with salted popcorn or pita bread. For me, tasting Starbucks Ethiopia gives me the idea how this coffee was brought in to life, the sweet citrus notes that represents the historic culture of the Ethiopia and the Dark cocoa flavor that represents the pride and honor of the Ethiopian for their coffee.
