People around the globe prepare and drink their wonderful cup of coffee in their delightful way. It is part of our morning rituals that most of us do to jump start our day. It is a dark liquid coming from grounds brewed the way we like it but some rarely know where it is coming from. The story of coffee begins where the green coffee bean hidden in the red and golden coffee cherries.
Growing coffee needs passion and dedication to produce a high quality and flavorful coffee. Coffee doesn't grow anywhere in the world but the Philippines is blessed with ideal soil, climate and elevation to cultivate and grow coffee trees. One of it is the forest coffee plantation of Baslay, a mountain barangay of Dauin, Negros Oriental south of Dumaguete City.
To visit the farm is an arduous journey like how every cup of coffee ends up in our table. As you move up into the mountains, the ever presence of Mt. Talinis views like an ancient god telling you the all things precious comes from the earth. That is why the farmers has been preciously guarding their forest for 35 years since growing coffee cherries.
The forest where the plantation grows is like a jewel on the side of the mountain where the people of Baslay realize that nature provides to those who protects it. Thus from "kaingineros" they turn to forest warriors and the mountains didn't fail them. Sweet and earthy flavors of coffee flows from this side of Mt. Talinis Year after year, coffee cherries are hand picked and carefully selected under the shade of the forest trees. They themselves sort, wash, dry and roast coffee. This brings a wonderful medium roast coffee of Arabica and Robusta that really represent the passion and hardships of the farmers.
There is sweetness in every sip just like how sweet life can be once it is in harmony with nature.
